Red Line


Datterini tomatoes (long cherry tomatoes) are a variety of small long-shaped cherry tomatoes, with a particularly sweet taste and pulpy consistence. They come from the Apulia Plain, where the sun is particularly warm. This area is famous for its flat landscape and extensive fields, which are ideal for the cultivation of tomatoes.
This land produces fruit which is carefully selected, hand picked and tinned to guarantee all year round freshness and the deep flavour that the tomatoes have when they have just been harvested. They are perfect for quick sauces and for bruschette (roasted bread).

The product may be directly consumed or depending on the consumer’s preferences may be used for the preparation of sauces or dressings, precooked dishes, etcetera.

Process description
When the tomatoes have been washed, they are inspected, selected and canned. Then the sauce is added. The can is sealed by welding the lid, followed by sterilization, cooling and drying.
 The sauce is prepared with grinded tomatoes, from which seeds and skin are filtered away. The sauce is then heated in a low temperature and pH is adjusted with citric acid only if necessary. Lastly, it is reheated once again and poured hot into the can.

Preserving process
Pasteurized and with stabilized pH acidity through thermical processing (appertization process).
